Are there any general [0day] sites that don't delete their torrents after 28 days (and those older torrents are still alive and have seeders)?

Which are those that have one or more category(s) of torrents that have significantly more torrents than other general trackers in the same category(s)? (<- if that grammatically made any sense to you ... :shifty:)

What about those general trackers that have categories of torrents (with a significant number of them) that others don't have?

You could always request a re-seed if it is a site with lots of members!

yes demonoid does have older files, although recently they have been deleting torrents over 1 year old.
not everything is well seeded, some of the older files may be really hard to get or just take a long time. I use demonoid to get files that are somewhat current but not super new.
don't forget the websites that index multiple public trackers, that is usually going to be your best bet for finding older files.
