1. Star Wars Knights of the Old Republic
2. Star Wars Knights of the Old Republic II: Sith Lords (Release in Feb.?)
I really enjoyed KotOR, can't wait for the sequel.
Do you gotta be a Star Wars fan?...I always have been, so I couldn't tell ya.

Any of the Baldurs Gate series, though Icewind Dale is my fav.
Final Fantasy (any) but 7 and up are newer. The graphics are kindy cheesy but they are addictive. 1-6 are SNES, so you'll need an emulator. Easy enough to google all of them up. 7 and up are for newer consoles like the PS or PS2 and Xbox though they should be out on PC. FFX is rated very highly and I plan to get it soon......
Temple of Elemental Evil is supposed to be really good, but I haven't played it yet.

Note:These are all sword and sorcery rpgs, not sci/fi like starwars. Doesn't really effect anything but the type of graphics-swords .vs light sabers and horses vs starships.

You don't have to like Star Wars to enjoy KOTOR. I'm not a big Star Wars fan, so I didn't expect much out of KOTOR, but it really was very enjoyable.

Temple of Elemental Evil is terrible. ;)

The Baldur's Gate series and the Icewind Dale series are pretty good.

Planescape: Torment is excellent. Good luck finding it, though.

Betrayal at Krondor is very good. Return to Krondor is still a decent RPG, but not really close to its predecessor.

Neverwinter Nights and its expansions are worth a go-through or three.

Daggerfall and Morrowind are great.

Fallout and Fallout II are good.

Summoner's alright.

Arx Fatalis is interesting. You can make your own pies, that's pretty cool.

Gothic and Gothic II are excellent, albeit ignored.

Darkstone is kind of fun, but it's kind of Diabloesque.

The Wizardry series is kind of fun.

If you're looking strictly for RPGs, I've got a few more I could list. If you don't mind crossing over into the "adventure" category, there's a whole lot more.
