Is there any tracker comparable to the demonoid.com, with tens of thousands of torrents (and cool stuff like Mac torrents, documentaries, tutorials, books, etc, no pr0n crap) and easy sign-up procedure?

You can try mininova, it's a public tracker with lots of torrents.
Also check Torrentbox, signups are open and they don't have that ratio thing, but they have 28500+ torrents :w00t:
