Well, first you need to get Daemon, then with it you'll be able to mount the image file,
you will get a virtual drive in 'My PC', there should be DVD (vob, ifo, etc) files in it.
Then, you convert those files as you would do with a normal DVD you put in your PC.

---OK, Im assuming you have converted DVD to avi before,
    if not, say so.

I've converted other video codecs, but I am not sure how to do Dvd to Avi I'm sure it's the same but to make sure what programs can I use and if there are tutorials please point me to the right direction and I'll be on my way. Thanks

Converting DVD to avi shouold be no problem,
for example, you could use the Divx Software to get an avi(divx),
but if you like other software, then check the guides in this website.

As I said, it isn't dificult, just follow some steps and Done!
The only part that I think could be confusing, if you have never done it before,
is mounting the image file; just go to the Daemon Tools website and look for instructions.
