My all time favourite : Jimmi Page - Starway to Heaven ( Led Zeppelin - IV ) ...pure & perfect !
All notes are in the right place and the sound is clear and emotional...could not be better even if re-done today...

Others in no particular order...
Steve Vai - For the Love of God ( Passion & Warfare )
Steve Vai - Juice ( Alien Love Secret )
Steve Vai - Big Trouble ( David Lee Roth-Eat 'Em & Smile )
Eric Clapton - White Room
Steve Morse - Cruise Missile ( The Introduction )
Steve Morse - Hey Cisco ( Deep Purple - Purpendicular )
Richie Blackmore - Highway Star ( Deep Purple - Made in Japan )
Ron Thal - Hermit ( Hermit )
Ron Thal - Fatback ( Hermit )
Joe Satriani - Surfin' with the Alien
John McLaughlin - solos from My Goals Beyond & Electric Guitarist
Wes Montgomery - solos from The Incredible Jazz Guitar of Wes Montgomery
Neil Rodgers - guitar fills on Chic's Believer album
Eric Johnson - Camel's night out ( Venus Isle )
Eric Johnson - Cliffs of Dover ( Ah! Via Musicom )
David Gilmour - Time ( Pink Floyd - Dark Side of the Moon )
David Gilmour - Another brick in the Wall ( Pink Floyd - The Wall )
Joe Petrucci - some different Dream Theatre's songs
Nuno Bettencurt - some different Extreme's songs

Not the Best Ever, but the most meaningfull for me personally has to be:
Stray Cats - Runaway Boys , Brian Setzer on guitar. When i first heard it, i wanted to get me a guitar.

But for the Best Solo? That's too hard to answer, too many candidates...

Cheers:

I have to 3rd that!
Kit, you gonna have to see me play that when you come round, Note for note

I would also have to say Johnny B Goode by Jonny Winter, that guy is amazing! B)

Say What?- SRV ( not really a solo, more like a whole song)

Breathe- David Gilmore, Dark side of the Moon- proof that sometimes less is more

Blues Newberg- Danny Gatton- eat your hearts out players

The Messiah Will Come Again- Roy Buchanan- pure longing spoken with 6 strings

Still Got the Blues for You- Gary Moore- the reason God invented the Gibson hollowbody

As has been said there are just so many, many of which (Whole Lotta Love, Hotel California) are really great but I've just heard 'em too many times.
