Personally I use VLC because it plays everything. My only complaint is that the program is ugly and the skins don't work well.

winamp, Winamp, WINAMP! It really whips the llama's ass. (for music anyway) It has an awesome searchable media library and allows you to edit the metadata of mp3's very easily and w/o stopping the song.
For video, I use either winamp or media player classic. I'd suggest you get the combined community codec pack and install. It will install codec to play probably any media file you come across. It also installs Media Player Classic.
