It's a cunting con, all the mock surprise with the "judges", all the other disingenuous pish.

They knew she was a decent singer, nothing great just decent. However the whole juxtaposition with her being an ugly cow made her seem better. So they frumped her up even more to make it seem even more fucking surprising.

There are actually three audition rounds spread over a period of months before anyone makes it to the TV point.

Besides the fact that they videotape several performances there are also in-depth interviews to determine back story.
Given those facts it is extremely unlikely the judges(especially Simon being he's the show's producer )wouldn't know exactly what to expect.

Probably even have the camera shots planned.
