Apache is by far one of the best HTTP servers available. It is not that difficult to use if you read the documentation.
BTW, you can use Apache with both Windows and Linux.

Try using the The Uniform Server .
It is based on Apache and is small but with lots of features...
Features:
Apache2
PHP 4
MySQL 4
PERL 5
The smallest size with full functionality.
You can also try Abyss Web Server which is also good.
Despite its tiny footprint (for example, the executable file size of the Windows version is less than 112 KB); it supports HTTP/1.1, dynamic content generation through CGI/1.1 scripts, Server Side Includes (SSI), custom error pages, and user access control (HTTP authentication/password protected files).
There both easy to use.

It might help if you told us what kind of site you plan on hosting from your pc. Not in detail but just in general.
Php does not need mysql. And if your just serving simple web pages then you can just use html.
Apache, Mysql, and Php = lots of processes and memory power. And if your going to be using the same pc for daily use then you will feel the drawback.
