I think pro is pretty good, ive used home and pro XP, pro has never lost any of my data or crashed.

pro. media center is for ease of use. but it's not really that good. mac os x is prob the next best. then linux.

I'd say a toss up between 2003 server and 2kpro but out of your choices I'd say XPpro
