If you want to dictate what happens to junk mail once you receive it, go to 'Tools'>'Junk Mail Controls' and under the Handling header there's some options for it. I've got mine set to move all junk to a junk folder and automatically delete after 7 days. If you want to turn off junk mail detection altogether, click the 'Adaptive Filter' tab and uncheck the box.
If you want to mark a message as junk or want to correct an email that's been mistakenly labelled as junk, right click on it and select 'Mark'>'As Junk' or 'As Not Junk'. This updates the adaptive filter and increases the likelihood of similar messages being labelled correctly.
