Not the Best Ever, but the most meaningfull for me personally has to be:
Stray Cats - Runaway Boys , Brian Setzer on guitar. When i first heard it, i wanted to get me a guitar.
But for the Best Solo? That's too hard to answer, too many candidates...

I have to 3rd that!
Kit, you gonna have to see me play that when you come round, Note for note
I would also have to say Johnny B Goode by Jonny Winter, that guy is amazing! B)

The idiosyncratic syntax of riddles interests me
Say What?- SRV ( not really a solo, more like a whole song)
Breathe- David Gilmore, Dark side of the Moon- proof that sometimes less is more
Blues Newberg- Danny Gatton- eat your hearts out players
The Messiah Will Come Again- Roy Buchanan- pure longing spoken with 6 strings
Still Got the Blues for You- Gary Moore- the reason God invented the Gibson hollowbody
As has been said there are just so many, many of which (Whole Lotta Love, Hotel California) are really great but I've just heard 'em too many times.
"I am the one who knocks."- Heisenberg
For me the best guitar solo ever is dave gilmore playin comfortably numb on the live delicate sound of thunder album.
My fav acoustic is on guns and roses patience
