Just the ones it comes with, all crappy players. I'm playing in the Scottish First Division, I assume as you win tournaments and leagues you get to unlock better players, stadiums and..stuff.

Yep! With every win you make you get some credits. Get a tournament to get some more. Use those credits to unlock new players stadiums etc..
