Use DVDShrink
Set preferences to target DVD output size to DVD-5 (4.7GB)
Then click "File I/O and deselect "Enable burning with Nero".
Click "Open Disc"
Select drive which has disc
Click "OK"
Click "Backup"
Done.

Would dvdshrink do the job properly with only minimal loss in quality? i have seen many times people speak about it negatively.
I don't notice any difference at all and have always felt it to be the best.
Then again, opinions are like assholes....

Well DVD Shrink isn't the best piece of software for quality rips. I use it myself though because it gets the job done in no time. Other software require a lot more time and effort and not to mention a fast computer.
I can highly resommend the following sites:

Well if you read around different movie encoding/ripping sites that's the basic opinion based on experience. Also you could do the experiment yourself, try to rip with DVD Shrink and then try with a highend software like DVD Rebuilder, you can clearly see the difference.
