I would start with Photoshop CS3 for Dummies by Peter Bauer - Peter is the help desk guru for NAPP. NAPP members can post questions to the NAPP Help Desk and Peter usually answer within the day. So get the basics down like learning how layers work, adjustment layers, difference been brushes, levels, historgram etc. and then you can learn the cool tips and tricks that will amaze yourself and your family and friends. I can post the e-books if there is an interest. They average 30mb.

I kinda self tought my self but there are a lot of good sites with tutorials out there the main things to learn are about layers, brushes, paterns, fonts and then start learning effects and filters

sitepoint.com is what I recommend. It has a variety of web design tutorials and article.
I would suggest you practice and familiarizing each tools and commands. Just play with some images :)
