is there a way to check how much voltage your powersupply is sending out, and its temp? from within the computer

You want to test with a digital multimeter.
Everest is only as accurate as the sensors on the motherboard.
Which isn't very.

Just to illustrate why you want to double check with a meter...
Everest reports my +12v as 11.78v.
Multimeter shows it as 12.22v.
Rather large discrepancy.
