Default image viewer

When I double click on an Image, it opens up in Photoshop.

How can I make sure that it does NOT open in Photoshop. I want Microsoft Paint to be my default image viewer.

Now when I double click on an image, it open with MS Paint.

But, if I do 'right click > Preview' it again open with Photoshop.

Can I also set 'Windows Picture and Fax Viewer' as the default application to preview the images ??

yes.
you could also go into explorer > tools > folder options > file types
scroll down to the file type and set the default viewer there
then all of your <whatever extension you change> will open with the selected viewer
if you simply right-click on one file to change it,
it will be that one file only that opens with your selected viewer
