If you don't have a mandolin or a seriously good knife (with skills to go with it)don't even bother trying.

I used a peeler. I have the skills but alas, shite knives.
I'd kill for a mandolin.

Then you are blind to the concept of culinary juxtaposing.
Which if I'm entirely honest I find a bit surprising.
Wait a minute, why would I even discuss such a thing with someone who doesn't even own a mandolin.

Why would the fact that I dislike maple syrup negate my ability to cook imaginatively? I am in no way "blind" to culinary juxtaposing at all thanks. Don't judge my ability on one factor please. I'm a bloody good cook thank you very much and I have to say that I have never used maple syrup in any meal in my life, and I haven't missed it.
I don't own a mandolin because I'm fucking poor and there are other things I need more. Decent ingredients for example, or a sofa.

Crabby, get yourself a cheese slicer (they're the triangular shaped things with a slit at the base on a handle). Dead cheap. Slice the parsnips that way and then deep fry them in vegetable oil.
Edit: And make sure they're dry by patting them with kitchen towel and put them in really hot oil....up max for about 5 minutes from cold. They should crisp up in seconds rather than minutes :).

I'm trying to avoid the deep frying to make a healthy crisp alternative - hence the baking. I've seen it done before so I'll try it again with the slicy bit on the grater over the weekend. Good idea there. Cheers!

I don't know what a mandolin is. True story.
When I read a word on this forum I'm not sure of, I usually google to discover its meaning (it's happened like 4 times this year already) - but given the threadular context, I shan't on this occasion.

If pushed - and before reading this fine thread - I would have said a mandolin was a species of small monkey.
Can't be tho' as a small monkey wouldn't be ideal for slicing parsnips.
Whatever parsnips are.

Ingredients
2 cups groundnut oil
1 peeled parsnip
salt, to taste
Method
1. In a large saucepan, heat the oil to 180C/350f/Gas4 (a cube of bread should go golden brown if dropped in).
2. Using a vegetable peeler, cut the parsnip into long, thin strips. Fry these in hot oil until golden and crisp. Drain on kitchen roll.
Serve.
