Can anyone recommend software (free or commercial) that I can use to capture, edit and remaster sound from CDs or cassette tape.

Currently I am using Audacity to capture audio from old cassette tapes and then using a filter to remove the hiss. Then burn to CD or MP3. Works extremely good for a free program. Audacity is a gem in the world of freeware. But is there anything better?

Just curious if there are alternatives that people prefer.

You could try Sound Editor Deluxe.

Waves Audio use to be the choice of most studios for audio processing but that might be overkill for what you are trying to do, but it wouldn't hurt for you to check it out and I am sure you could probably find it somewhere.
