From paper to electronic

Are there any software / solutions that can help my friend convert her telecom's paper invoices to electronic ones? Any ideas?

Scan to image or pdf, photograph, recreate in Excel, Word, etc. Now that I've given a real response identifying a few of many obvious approaches, why the fuck did you even ask?

She's looking for something automated or easier to use. Anyway, I was doing a Google search and somehow came to Cass Info (https://www.cassinfo.com/en/Telecom-Expense-Management/Improve-Process/EDI-Invoice-Conversion.aspx). Maybe my friend would like to try it.
