The first Evil Dead is one of the best horror movies in my opinion,I saw it when I was 13 and it scared the hell out of me.
the sequels are good as well but ther're more tongue in cheek type instead of real horror.
The third one was really funny as you said especially The Three Stooges scene with the Skeletons in the Graveyard   Now that was hilerious.

all 3 movies are great ,but if u go to the store and buy the dvd collection you get the book of the dead as a cover case ,it's cool as hell cuz it feels real ,like skin.

bad part it's like 30 -40 dollars but worth it for the book part

In Evil Dead 1 Sam Raimi aimed at making it pure horror
Seeing as it done well he then added some dark comedy to the sequel Evil Dead 2...That done just as well so he though what the hell and made Evil Dead 3 A Spoof Horror....I prefrer the first 2 ED's but that has to be my most favourite Film trilogy
