Mouth of Sauron will be in extended... he was in the game, the book, the trailer, and the Weapons and armor of the Lord of the ring movies

Eowyn & Faramir
Scouring of the Shire

as they take up pretty much space in the book.

All the scenes with Saruman....which will be a fair bit if its a true representation of the book.......the shire saga at the end is one of the best bits.

There's also Eowyn treating Faramir thro' his recovery and them falling for each other.

There's also Pippins travels thro' Gondor with the guards son as he sees the town ? (this may not be included come to think of it)

There's also the ending......no mention was made of what the fellowship would do at the end such as Legolas and Gimli going off together for an adventure etc

All in all i'd say expect approx 40minutes or so to be added......

scouring of shire definite wont be in it. Main reason because Treebeard already said Saruman will be trapped in Isengard forever

well the first 10 minutes of the film was suppose to have wormtounge and Sarum but what was suppose to be in two towers ended up at the beginning of ROTK Christopher Lee was pissed off about it

Well, Shelob got moved to RotK too, in the book that part is in the TT.

The whole Isengard aftermath doesn't tell much story-wise except for the fact that Saruman was using a Palantir, which was conveniently revealed in the first movie already.
