I Like Bebop, What Else Is There?

Im not a big anime fan, however i watched the full series of cowboy bebop on cartoon network, and watched the movie on demand for free at my house. I really liked it. Is there any other shows that are pretty cool and serious like this. The jazz music and the symbolism and junk is real interesting. I HATE those melodramatic ones that always have sweat beads coming from their head and lil girls laughing. So any reccomendations?
