Oooh without the garlic, that salmon pasta dish looks very appetising. Dill with salmon is gorgeous.

I only cook very simple meals, maybe beans on toast or Pasta with a tomato and herb sauce (which is a tin of tomoatos mixed with some dried herbs  )

Cooking isn't my forte :(

I would recepies please - cauze im bored of my own food
everyone has a different style. (and no i dont want to open a book)

Two things that are Rediculously Easy if you have tons of friends over - and its sensational

Do these 2 at the same time

Get White & Red Wine
(and no you dont need to 60s standard fondue "set"

Cheese Fondue-buy a few paks of ready cheese fondue, french baguette, smear pot with garlic, shoove in Cheesy paks, peper heat up, stir all the time - in meantime heatup bread - cut bread in small pieces. get tons of forks, tea lights and some kkind of stand to put on on-serve

Meat Fondue - get different types of meat, chicken, vegetables - pot with good olive oil, heat up oil, cut meat and veggies into pieces - serve pot on candles (use old tableclothetc it gets real messy)

chicken curry jaipur

1 4lb stewing chicken, cut up.
3c hot water
2 1/2 t salt (use less)
3 peppercorns
1 onion, studded with 4 cloves (use few more)
1 small carrot
2 T butter
2/3 c minced onion
3 T curry powder (get a good brand)
1 c coconut milk
1/8 t freshly ground pepper
3T chopped crystalized ginger
1/4 t ground cloves
1 t chopped fresh mint or 1/2 t dried
1/4 c lime juice (fresh or roses)
1/2 c heavy cream

this next part is in my own words, Nat

1. Put the chicken in BIG pot with the water, 2t salt, peppercorns, onion and carrot. Cover and simmer for an hour.

2. Remove chicken from broth and cool. Reserve broth. Get all the chicken off the bones and cut into small pieces.

3. Melt the butter in LARGE pan (tht you have a lid to fit). Add the onions and saute til tender, not brown. Stir in the curry powder.

4. Gradually add the coconut millk and one c of the strained chicken broth. (I use a little more). Add the pepper, remaining salt, ginger, cloves and mint. Cover and cook over low heat for 30 min.

5. Add the chicken and continue cooking about 30 min more (til chicken is tender). Just before serving, stir inthe lime juice and then the cream.

6. Serve over rice, and serve condiments and chutney. (I hate chutney)

(I've served with chopped nuts, gold raisins, chopped apples, and shredded coconut for the condiments)
This is the best recipe. I love it.

My Supah Lumpah:

Deep fry chicken-legs with heaps off lemongrass and some garlick and soysauce.

Let them simmer for a while(30 min) and cool off.

Boil some thai-jasmin rice, pref. in chicken-stock with thai-basil and spring onion.

Get all the filet off the legs, slice it into small pieces and refry the meat shortly with

some sesame-oil and 5-spice chinese herbs and some freshly grinded ginger.

Make little "pancakes" of the rice on foil and fill them with the meat mix.

Keep the rolls in the fridge for a day.

Serve with some peanut-IKE-sauce and pineappleslices.

Other than the weekends, most of my cooking is done with an eye to easy because I am pretty tired from work.

Here is an easy one.

2lbs lean ground beef (form in loaf)
2 cans cream of musroom soup
I packet dried onion soup

preheat oven to 350

place ground beef loaf in pan.
put other ingredients on top.

*bake for 1.5 hours.

serve with fresh garden salad and veggies.

*while baking go to freezer. get out bourbon slush. partake

Bourbon Slush

4 C Water
4C Cranberry Juice
1 large can lemonade
1.5 cups bourbon (this recipe started at one cup---am known to add more)
2 cups brewed tea (very strongly brewed tea)
1 cup sugar (I don't usually add this much)

Freeze till slush.

wine works, too. :D

For a very tasty "healthy" meal.

Chop loads of veg into 1" sized cubes. The best veg are- red and green peppers, Aubergine(eggplant to you in the US) courgettes, mushrooms.tomatoes, and sliced onions.

Toss the whole lot in 1 tablespoon of olive oil and a good sprinkle of Balsamic vinegar and roast in the oven at 200 c for about 30 mins.

Then put fish fillets on the top -Salmon, hake ,plaice or sole or anything you fancy as long as its not too thick. Cover with foil and return to the oven for another 15 mins.

Serve with new potatoes for the healthy option , but its great with the dreaded CHIPS !!

Taco Salad

1 pound ground beef
1 mediun onion
2 tbsp chili powder
1 cup picante sauce
1 can chili beans
1/2 pound velveta cheese Cheddar works too
Tortilla chips
lettuce
tomatos

brown beef with chopped onion and chili powder. Add picante sauce, chili beans and Velveta cheese. Stir ingredients together, simmer until cheese melts. Shred lettuce and chop tomatos. Spoon mixture over tortilla chips top with lettuce and tomatos.

I use mild picante sauce. For a spicier mix add more chili powder and use a hotter picante sauce.

I love cooking and I do all the cooking in our house (I live with my sister and her boyfriend) and a couple of nights a week I cook for friends or go round to their houses to cook for them. Tonight I'm going round to my good friend Andy's and he has a couple of his mates coming over, I'm going to cook them a Thai green curry...

Green Thai Curry
1 tablespoon of green thai curry paste (depending on how strong you like it) see below recipe
1 can of coconut milk
1 handful of mange tout
1 handful of baby sweetcorn
1 corgette
1 oz of galangal
1 teaspoon of muscovado or unrefined sugar
1 teaspoon of salt
2 teaspoons of light soy sauce

add all of the other ingredients - you can use whatever veg you like, I just use my favourites
bring to the boil stirring all the time and then reduce the heat and let it simmer for about 5 mins
serve with fragrant jasmine rice and mango lassi

You can buy green thai curry paste ready made in shops but I prefer to make my own. I make loads in one go then freeze it in a icecube tray so that I have measured portions ready to use.

Green Curry Paste
15 small green chillies
4 garlic cloves
2 lemon grass stalks
2 lime leaves
2 shallots
2oz fresh coriander leaves, stalks & roots
1 inch piece of fresh ginger
2 teaspoons coriander seeds
1 teaspoon black peppercorns
1 teaspoon of peeled lime rind
1/2 teaspoon salt
2 tablespoons groundnut oil

Put all the ingredients in a blender/food processor........ or........ grind them together with a pestle & motar

You put the egg in directly and start counting the minutes from when the water starts boiling.

There are also neat little thingys that probe a little hole in the top, preventing

Since no-one included a pic of their cullinary masterpieces, I decided to :01:

Note that wholemeal bread was used to create the toast and that instead of butter I've put dairylea slices on each of the 3 pieces of toast - each of which I've cut up into nine squares. The beans are Heinz, I used a full tin and warmed them in a saucepan, not a microwave.

10-26-2004, 06:45 AM
recipe?

Sweet and sour Meatloaf

Sauce
2/3 cup ketchup
1 1/2 cups granulated sugar or honey
1 cup vinegar or squeezed lime
2 tablespoons FINELY minced ginger
4 teaspoons minced garlic
1/2 teaspoon regular mustard or 1 teaspoon Dijon mustard*
3 teaspoon sweet soysauce
1 teaspoon thaibasil
1/2 teaspoon coconutmilk
*1/2 cup of finely sliced pineapple

*Optional

Meat Loaf
1 pound ground beef
3/4 pound ground pork (approximation)
1/3 cup finely chopped spring onion
(white and green parts)
3/4 cup bread crumbs
2 eggs
2 tablespoons rice wine or any dry white wine
3 teaspoon minced garlic
2 tablespoons cornstarch
1 1/4 teaspoons salt
1 teaspoon sweet chilly
1 teaspoon currypowder masala

Mix all sauce ingredients thoroughly. Set aside to allow flavors to marry.
Next, combine all meat loaf ingredients except cornstarch. Take 1 cup of sauce AND mix it into meat. Follow this step with evenly sprinkling cornstarch over meat and thoroughly mixing it in.

Preheat oven to 350 degrees F.

Place meat in loaf pan and pack it down. Bake covered with foil for about 30 minutes. During last 10 minutes of initial 30-minute baking cycle, remove meat loaf from oven, drain fat and slice into several serving-size slices. Pour about 1/2 cup of sauce over meat, making sure some of sauce runs down into cracks. Bake uncovered for about 15 more minutes.

Meanwhile, if you want, you can heat and thicken leftover sauce with about 1 teaspoon cornstarch and an equal amount of water. As sauce starts to thicken, you can add about 1/2 teaspoon sesame oil to sauce.

This recipe makes a lot of sauce, so leftover heated sauce can be spooned over individual meatloaf servings if desired.

NOTE: If you want a browner meatloaf, bake covered for about 20 minutes and uncovered for 15-20 minutes. Then drain fat, slice meatloaf and pour sauce over it.

Thanks for asking!!!

Sheer magic.........

The reataurant is in the middle of the forest, called the forest of dancing

trees.

It's that whole rustic thing, it has been an Inn since 1768.........

The food was incredible.

I had a halfwarm salad with duckchest as first course, Fre had deerham with

truffle-butter. Both exquisite, though i didn't find the ham that special.

Next time i'll ask for truffle-butter on the duck; true bliss!!!

Fre had Salmontrout with limesauce as the main course.......

Omg, what a treat!!!!

I had a Dancing forest meattriangle: Deersteak, Wild Boarsteak and

Hare with cranberry compote , wildsauce and red pear.

Everything was served beatifully arranged in a perfect pace.

We both had red wine, Fre had white wine to accompany the fish.

(very special for me, as i hardly drink........)

The service was the best i ever had in my country, not well known for

it's good service.

The owner/maitre D really has it going.

Btw all waiters were male.....:01: :P

Knowledge of both food and manners was unprecedented.

On top of that we were sooo happy, both looking back 12 years and looking

ahead, i'd give the night out a 9,5/10. (take note: i never give a ten....)

Price for all this culi-blessings: 87,50 Euro before tip.(note: service is allways

included in holland.....) Needless to say the tip was mentionable........

Chilli (Serves 4).

4 tbsps olive oil, heat on full until hazed
Add 1 onion, chopped, coarse
Add 1lb lean steak mince

Stir and turn until browned off

Add 2 tins chopped tomatoes, 1 tin baked beans, 1 tin kidney beans
Stir in

Add 4-5 dried jalopenos, 2 tspns hot chilli powder (for colour), 3 tspns cumin
Stir in and boil

Bring down to a simmer, covered for 2 hours. Stir every 20 minutes.

20 minutes from serving, take 2 mugs wholemeal rice and place in caserole dish. Add boiling water, covering rice by 1/2 inch. Microwave on full power (850W) for 10 minutes, stirring after 5 minutes. The rice should be moist and fluffy but not swimming in water. If swimming, microwave for another 3 minutes on full power.

Let rice rest for 10 minutes and serve with chilli, plain nachos, parmesan and greek yoghurt.

Cheap, tasty and guaranteed to impress.

:)

It is realy more of a challenge than you guys might think.

I've cooked for 28 years now, both professionally as at home, but i never use

recipe's.

I do intuitive cooking.

But i'll give it my best.

Thanks for the culi-empathy, it is really my number one passion.
