If you want to do MIDI editing then use Sibelius - you need a decent sound card for any real sound quality.

Here is a link (at bottom of this post) to a thread with lots of information and hashes for various audio apps.

Most are quite complex and have a pretty steep learning curve. If you havent used anything like this before I'd reccomend that you start by looking at something simple - perhaps a loop based program such as Acid 4 Pro. Follow the pdf manual and take some time to get used to the GUI and way it works. Most sequencers work under similar formats and it takes time to familiarise with the layouts and operations.

To record audio (guitars, keyboards etc) and use virtual instruments (VSTi's) with a midi keyboard would require a very good soundcard with ASIO drivers otherwise you will find there is great latency (a time lag between playing a note and hearing the sound) which makes playing in time with anything impossible. The soundcards that come installed with a pc are generally not up to this.

There's no problem with this if you use loop/sample based programs or if you input the notes in a step editor with the mouse. You can download audio samples and loops from Kazaa and then cut, paste and arrange them in multitracks with effects to make songs etc.
