Just seen this weeks recipe...

Take fayre garbagys of chykonys, as že hed, že fete, že lyuerys, an že gysowrys; washe hem clene, an caste hem in a fayre potte, and caste žer-to freysshe brothe of Beef or ellys of moton, an let it boyle; an a-lye it with brede, an ley on Pepir an Safroun, Maces, Clowys, an a lytil verious an salt, an serue forth in the maner as a Sewe.

Chicken gizards, feet and heads added to Beef Broth with various herbs and stale bread. Boiled for a couple of hours...

Take a large chicken carcass, with the head, the feet, the liver, and the gizards; wash them clean and put them in a large pot. Add fresh beef or mutton stock and boil them together. Lay it out on bread (only the very rich used plates) and sprinkle with pepper, saffron, mace, cloves, and a little verious(? mixed spice) and salt and serve it up.

Not hard to translate if you use a little common sense.
