Edit: That doesn't work.. since it is Prince's and not Princes so you can't just add teh S to make Princess it would be Prince'ss

Boab is right.
It would only be prince's if it was part of a sentence where a possessive apostrophe was used. For example, the prince's grammar book.
Apostrophes are never used for pluralising.
