Should I get one 1TB hard drive or should I get two 500GB hard drive? Which should be more effective? I have found good price for both of them the Hitachi 1TB $230, and the Fantom 500GB $90, two should be $180.

Seriously you should get Seagate's drives because they are just awesomely reliable. Cost a bit more but it is well worth it. Or even Western Digital but whatever you do, dont get those 2 you mentioned.
If you must pick those you mentioned, get 2x500GB.
I've never even heard of Fantom HDDs before so I just did a bit of Googling...not a real good rep.
Apparently, they are notorious for using remanufactured/recertified drives in their external cases and have horrible customer support.
Personally, I'd go with a better known brand.
I too am fond of Seagates but right now Newegg has a deal on WD 750GB drives...only $119, so you could get two for the price of one Hitachi and increase the storage capacity by 50%.
Newegg is just astounding. I hope they will come to europe soon.

Seagate drives are great for reliability.As for size or configuration it would depend on what you need it for.
