Smurfs are not a carbon based life form so do not breathe in the same way as we do - they ingest all the oxygen they need thro' their food. If you chose to ignore this and use strangulation as a form of smurf torture then I do not believe they would change colour any more than someone's foot colouration would alter if you pressed their ankle.
In fact if you managed to injure a smurf you are likely to get coated in poisonous mercury as I believe that is what they use to transport nutrients around their body.
