I used to work in a rather well know restaurant several years back.
What they do is scrape the mould off, and put it back on the shelf.
Noone ever complained.
The reason it got moulded in the first place, is that noone with the tiniest bit of class wil ever ask for ketchup in a good restaurant.

Actually, I believe they call it "tomataise" around here.
Cocktail sauce has whisky in it.

Nope, whisky.
These days, sauciers in restaurants tend to use whisky light btw. :rolleyes:
Didn't know it existed, but they have whisky with a reduced alcohol percentage for kitchen purposes. Still holds about 20 vol% though. Same thing for cognac.

Ingrediënten voor cocktailsaus:


4 eierdooiers
100 cl maïsolie
1.5 cl azijn
2 eetlepels mosterd
peper en zout
8 eetlepels ketchup
20 druppels Worcestershiresaus
4 eetlepels cognac
1 citroen

Cocktail Sauce
From Better Homes and Gardens New Cook Book (Canada, UK)

Ingredients:

1/4 cup bottled chili sauce
2 tablespoons lemon juice
2 tablespoons thinly sliced green onion
1 tablespoon prepared horseradish
2 teaspoons Worcestershire sauce
Several dashes bottled hot pepper sauce

It's called 'Carrefour' now :P

I think it both can be made with whisky or cognac, I even found some recepies using sherry.

Nm, it will be closed by now.
No matter WHAT people put in it, real cocktail sauce is made with SCOTCH whisky.Just like a curryworst special should be made with curryketchup.
