Leaving out the eggs leaves out the chocolate taste.

Eggs enhance the flavor and richness of chocolate.
We are used to chocolate thus amplified, without the eggs you're actually getting a more "real"- if less enjoyable- chocolate flavor.

I knew reading Alton Brown would come in handy.

BTW, I have a cake problem too.
