Crabby, get yourself a cheese slicer (they're the triangular shaped things with a slit at the base on a handle). Dead cheap. Slice the parsnips that way and then deep fry them in vegetable oil.
Edit: And make sure they're dry by patting them with kitchen towel and put them in really hot oil....up max for about 5 minutes from cold. They should crisp up in seconds rather than minutes :).

When I read a word on this forum I'm not sure of, I usually google to discover its meaning (it's happened like 4 times this year already) - but given the threadular context, I shan't on this occasion.

If pushed - and before reading this fine thread - I would have said a mandolin was a species of small monkey.
Can't be tho' as a small monkey wouldn't be ideal for slicing parsnips.
