Shirley people don't believe that everyone who turns up to those auditions gets a shot on the stage infront of the judges, they'd be there for cunting weeks if that was the case.
They must have some other people to pick out the mentals/good singers/cute kids/people with sob stories to go on stage, obviousment.
There are actually three audition rounds spread over a period of months before anyone makes it to the TV point.
Besides the fact that they videotape several performances there are also in-depth interviews to determine back story.
Given those facts it is extremely unlikely the judges(especially Simon being he's the show's producer )wouldn't know exactly what to expect.
Probably even have the camera shots planned.
