Technically I don't think they cut them into rectangles. They fillet, gut, head and tail them - throw them into a machine and the fish is then extruded in long strips. these are then cut and treated as you describe.
Trying to cut fish into rectangles would be the job from hell and reserved only for those naughty people who cut fishy digits from marine wild-life. :ph34r:
