Don't worry u can get it back just keep exporting cars at Easter Basin and then u will be able to buy it on Thursday of Friday I think then u can save it.d

The monster truck always spawns outside the hot-ring racer dome in Los Santos after you beat the race there and come in first (you also get the hotring racer or whatever that car is named)
