I'm a big fan of Dragonball Z. Thats what really got me started into anime (and alot of others as well, whether they admit or not). Even though I've seen all the episodes, I still like watching some of them over just for the fight scenes (Cell Games, Kid Buu saga). I even have the soundtracks to the series. I'm also a big fan Ghost in the Shell, mainly because IMO it is the ideal society (still working my way through the SAC). I also like Bleach, and will get around to downloading that eventually.
Dragonball Z is also what got me into anime. I didn't know what anime, well Japanese animation, was until I've seen DBZ. Like Solaris_Delta, I still watch it from time to time, but have not seen in its entirety since I've first watched the series ten years ago.
I don't know what my favorite series is, but I did enjoy watching Hunter X Hunter, Hajime no Ippo, Code Geass, and One Piece. I tend to read manga than I do watch anime series. During this season and the last, the only new series I've seen is Fullmetal Alchemist: Brotherhood. I will probably start watching some other completed ones if they are recommended.
