don't set them to fire - i would cut them into slices, put salt on 'em and stir fry 'em for 2 mins
@ Barbie: That must have been the most useful contribution to this forum yet.

it's funny cos it's true
I suppose it depends on the cuisine you're going for. I know there's several ways of cooking it but I can only do it one way. I flatten the eggplant in the pan then combine it with scrambled eggs then fry it.
Oh just so you know, I'm one of most clueless cooks I know.
I would agree with Allen. (strange but true  )
I cut them into long slices and salt them and leave the slices to rest for 20 minutes or so. Aubergines can be a bit bitter if you don't do this. It's great in a vegetable curry btw. I think they used to call it "poor man's meat".
There is absolutely no need to salt aubergines. It's a myth. Seriously, have you guys ever tried eating them without salting them? If they are cooked properly they are not bitter, especially true for the smaller ones. Peel them, cut them into chunks and stick them in a pasta sauce or curry.
Try this:

Get a really hot griddle, smoking hot.
Cut the Aubergine thin and brush olive oil the pieces. Not extra virgin.
Cook on the griddle for a wee bit on either side. depends on how hot the griddle is but say about 30 seconds to a minute either side.
Or as the wee crabby fella says cut them into chunks and use them in a curry or similar. That way they'll take on the flavours of whatever is in the sauce.
If you don't have a griddle then a heavy bottomed frying pan will do.
Suh, yes, suh! But there's tons of eggplants I gots to be cooking now so you're precious apostrophes have to take a backseat for now.
Btw, this is what my recipe from above looks like:

I think me and JP should write a cooking for Noobs guidebook.
We could write one for jimbo entitled cooking with nobs.

I'm not sure I know what a griddle looks like
