also u should check bitspyder.net and docs.torrents.ro for ebooks
bitme is definitely the best site for Ebooks. docs.torrents.ro is also pretty good (they have about 5000 torrents)

right now, waffles.fm must me considered
they have alot of e-books and other e-learning material

there is no special tracker for ebooks and elearning stuff after docs was gone

Since this thread got bumped, I'll recommend Bibliotik. That site plus BitMe, Waffles and Demonoid fill my e-book needs.
I vote for Bibliotik.org too, lots of rare books there.
