Berserk was something. When I started watching it, I just thought to myself, what horrible animation. Then I kept watching and it was so freaking hardcore. When he fought those 100 guys, that was amazing.
Too bad they didn't continue the series, instead of letting it be something to draw you into the manga.
But my favorite anime has to be Visions of Escaflowne series. I'm watching Kannon right now.
