How practical would it be to attempt to build a laptop?

You'll end up paying more for the parts...it's harder to get newer parts...and that's without software/warrantees.
sometimes it's cheaper, sometimes it't more. lookimg to get a notebook soon, and for what I am building, a white book is about 3/4 the cost of a pre made one. I am pretty sure for budget notebooks, a prebuilt is going to be the way to go. the chassis is like $500-1200 depending on specs, then add a proccesor, ram, wireless card, dvd player and see where that gets you.

Besides the cost of the parts. The installation has to be almost perfect because of the close tolerances space wise.
