Evas are "General-purpose Humanoid Decisive Combat Weapon - Artificial Human (Android) Evangelion".
Basically everyone was told they were robots but they are actually humanoid/angle things under the armour. The armour keeps them under control. When they go berserk they tend to go cannibalistic.
