I'm not 100% sure but I think that BackTrack2 comes with some kind of honeypot application that creates a virtual network. You can also try "Honeyd" here. Hope it helps!

I've never tried it.
Anyway all the major PenTest Live CD, among which Backtrak is the best imho, have honeytools built in
