If the human in question had had a good happy life frolicking around in fields and the fresh air, and not spent it cooped up in a crate being fed minced up sheeps brains, then I would eat human, yes.
Of course if it's survival,I'd get my recipes from Hannibal's Hor's Deurves.

For the first one he could have used the same stuff he had for fixing clocks, magnifiers and that, assuming that's needed.
Once he was telekinetic he could use droplets of water or whatever as lenses.
I still reckon it's more probable that he uses the power we saw him start out with, as it could work that way, rather than a second, undocumented one on top of the first (the others seem to have one each, except maybe the Nicki/Jessica-chick (although they could have a power each, but one of them is controlling both now)).
It could be a combination too, I suppose. First he saw how it worked, like, then he stole the absorption power from someone else who could get powers by eating brains.
EDit: And peter is an empath (the invisible man called him that), so he doesn't grab powers from people's genes, he gets it from their heads, and if it works for him, it could work for Sylar.
