My personal favorites would probably be (1) Tony Jaa in The Protector (2005) and (2) the two guys who fight the giant in District B-13.
Tony Jaa is an amazing athlete, and the variety of fight locations and opponents are actually pretty funny.
When I watch a fight scene in a movie I want to at least see something approaching a realistic fight, one of the best I have seen was a barrroom brawl in a film called "Once were Warriors" , the main character deals to the victim with a headbutt and knees and then gives him a kicking when he hits the deck. That's more my experience of what real fights are about.
Ong Bak had some great Thai but you don't get up or continue fight for as long as the fight scene went on when you're taking the shots that were thrown in those scenes.
