Most of my HD videos are .mkv. It's such a pain that my 360 can't play them, but the quality is pretty great. Can .avi do HD? I wasn't sure if it could.

Yeah most HD stuff now comes in .mkv files when downloaded...
There is no big deal, just download the lastest ConvertXtoDvd and transcode it the way you would transcode a .avi file and then burn the video files to dvd and watch that HD stuff
