if theres a .nfo file open it in notepad and it will give you instructions on what to do

the .r01 - r11 are parts of a split rar archive

You are better of using Nero to burn cue/bins. As ObiWan said the .r00 - .r01 etc files can be extracted using winrar. Once winrar is installed either open it or just click the .rar or .r00 files and it should extract whatever compressed files within those ".r" to a specified folder.
