What is the best way to mirror a volume to two open-e iSCSIs enterprise units? We are planning on getting two units and having a 500Gb volume on a connected client. However we want it to be mirrored between the two units for redundancy ?

I believe if i understand your question that raid 1 would be your choice unless you have 3 hard drive or more in which i would have used raid 5...
