I just rewatched the whole series recently. Started with I and went to 7 with Rogue One thrown in before 4. The original series is still the only one that seems to be good to me, but I have never showed much interest in the series and liked it less watching it through again.
Rogue one, 4-6, force awakens, 1-3 (optional or for a laugh)

On the original Laser-disc. It's the only version Lucas couldn't re-edit.
Star Wars, Empire, Jedi, Force Awakens, Rogue One. I prefer to watch them in the order they came out. Prefer to skip the Prequels.
You've gotta watch them all to fully appreciate the rollercoaster ride.

Watch 4, 5, 6, then 3.5 (Rogue One) and the 7 (Force Awakens). Then 8 (the last Jedi). And then go find the prequels, 1,2,& 3 and burn them instead of watching them. Then you're all set.
I think Topher Grace did a edit of 1,2 & 3 that's supposed to be good. It gets rid of loads of the early stuff and makes the rest much better and less kid-friendly. I think it's on youtube.
