Will try to show them in chronological order to people new to the series. Also, I would just stop after episode III, none of the Disney's.
Personally, I still honor the prequels, as they tried to expand the universe.

It's like asking if one should watch the MCU in order of release, or in "movie chronological" order..
I think in the case of Star Wars, each of the trilogies can sort of stand on their own, but Lucas did try to make them make sense. I think a pivotal moment is still how Queen Armadillo points out that "this is how liberty dies, with thunderous applause." It explains how did the original trilogy come to be.
Shout out to the Despecialised 4K editions. Best way to watch the OT...
