Uh, anything that can do OCR, unless there's a full transcript of the text in the images' metadata
Back in the day ABBYY FineReader was the least bad of the bunch (OCR isn't 100% accurate), but I don't know who the good players are nowadays.

Google on "jpg to ascii art" if you are looking for that kind of thing (aka nfo style). I use it in some of my source code now and again, not that it does anything but then seldom does my code

I missed the 'multiple' bit in your original post so your are probably not after ASCII art. I also use Omnipage too for that OCR fun. Warez versions clearly available.
Tools needed: Swift OCR text recognition software
The software is an intelligent OCR picture text recognition software. Support PDF recognition, scanning part recognition, picture text recognition, caj file recognition and other functions, so in the office encountered the above mentioned problems quickly OCR text recognition software
How about binary? Lots of ways to post jpeg as binary to newsgroups, bound to be a tutorial out there.
I just realized the original question is ambiguous enough to the point he could be looking for any of these things
Anyway, to send images (or any binary data) through a medium that only supports text, there's Base64, uuencode, yEnc, etc.
