here's a guide to converting flac to mp3 using winamp and itunes. It's kinda tedious, but always good to know it's possible.

Why would you want to do that in the first place? You lose so much quality converting to a lossy format like mp3. Surely there must be a better way?
AAC in an .m4a container with a ~350kbps bitrate would sound almost lossless and work on an iPod, not to mention Apple Lossless.
But, if you insist, I would recommend dBPowerAmp for all audio conversions. (Except Apple Lossless, use iTunes for that because dBPowerAmp has a bug where your iPod will skip tracks.)
